Subtle, with good aromatic intensity, offering toasty notes, white-fleshed fruit, spices, and citrus. The aromatic persistence is long-lasting. The bouquet evolves in a robust yet juicy way. The fruit aromas are generous, indicative of a fully ripe harvest. The wine is presented in a beautifully tailored style, where barrel aging is a true haute couture. With a little swirling, the wine reveals a purity that remains true to its character.
Palate
An impressive attack, vibrant and fresh. Light, mineral tannins, softened by a subtle oak grain. A structured mid-palate, where notes of yellow flowers reveal a toasty imprint from the oak aging, with breadth and power. A balanced acidity provides structure and precision. A solid, fresh finish, showcasing a truly noble power.
Enjoy it as an aperitif with fine charcuterie. Above all, it's a great gastronomic white wine, perfect with a chicken with morels or a veal stew. It also pairs well with pan-seared scallops, langoustine ravioli with Vin Jaune butter, fennel, and green apple, or perch fillets.
Serve chilled, around 11°C
