This rare, naturally sweet wine is among the great French dessert wines. The finest grapes are harvested bunch by bunch at the beginning of the harvest from a carefully selected blend of Savagnin, Chardonnay, and Poulsard. Placed on racks on a bed of straw for approximately four months, the shriveled and dehydrated bunches, bursting with sugar, are then pressed. 100 kg of grapes will produce 15 to 18 liters of must. Fermentation is very slow, and Vin de Paille must age for three years in oak barrels. It undergoes no fortification.
